Domaine du Bosc's unique volcanic soils were formed one million years ago off the Med coast (near what's now Adge), when a geyser spurted ash and lava 1km into the air. The Phoenicians and Romans made wine here; Pierre Bésinet (whose ancestors arrived in 1790) now cultivates 14 varieties using 'green' methods. A wine that's great with Bouillabaisse.

Their sizeable domaine comprises an enviable portfolio of chalky Sauvignon Blanc vineyards in Sancerre and Pouilly-Fumé. Wines from the latter perfectly express the appellation's classic smoky, minerally character. The grassy nuances and soft asparagus notes of this latest vintage make this great with goat cheeses, oysters and baked cod.

The well-connected Mignard family (Pierre Mignard was artist to the court of Louis XIV) bought Domaine Fontarèche in 1682, and it has been handed down the generations.Once owned by the Archbishops of Narbonne, this distinctive terroir of clay and limestone terraces is located in the Aude region, west of Narbonne, and is now run along ecologically sound lines ('la lutte raisonée'). vines of Colombard and Grenache Blanc the family create profoundly characterful wines which are aged for a year in used barriques and blended to express each vintage's strengths.
