Palate: A bundle of flavours layers and textures. Lemon /lime citrus all fresh and crunchy. Exotic veils of sweet herbs, nettles, gooseberry, stone fruits and cardamom spice. A citrus oil and lemon thickness is finished with a fruit tingling acidity. Food Idea: Goat's cheese, pistachio and rocket salad or marinated, barbecued prawns. Drink: Now and over the next 2 years as the Semillon contribution allows this regional blend to blossom. The temperate maritime region that is Margaret River stretches a north south distance of 100kms. Vineyard: Several vineyard sites are included in the making of this blended wine. All the Sauvignon Blanc sites are located in the southern part of the region in order to capture strong varietal intensity and high natural acidity. The Semillon is more broadly sourced from the south and centre of the region to include the full spectrum of Semillon's varietal characteristics.It is important to indulge Semillon with soils of high natural moisture retention to ensure ripeness. The 2008 season: A dry and warm spring / summer and an autumn harvest period of continue warmth presented near perfect vintage conditions. The resulting white wines show an abundant array of varietal expressions which are both complex and pure. Subtle climatic changes and soil diversity along this substantial stretch of coastal land, allows for an extensive array of varietal expressions in both Semillon and Sauvignon Blanc. It is the region's climatic ability to fully ripen Semillon that sets this regional blend apart. From this treasure trove of choice the region's signature blend has evolved.

NOILLY PRAT – Original French Dry 75cl Bottle
Noilly Prat (pronounced Nwa-ee Prat), known as 'the Rolls Royce of vermouths', is recognised by barmen all over the world as a premium cocktail ingredient. The characteristic taste of Noilly Prat is attributable to the blend of white wines, fruit essences, herbs and spices. When combined with oak ageing, the result is a truly excellent dry vermouth. In 1813, Joseph Noilly created the first recipe for dry French vermouth. To this day, the process has remained unchanged. Still produced in the South of France, the white wines are matured for eight months in large oak casks. Then, in a unique open air process, they are transferred to smaller oak barrels, where for 12 months they are subjected to the elements and take on a deep amber colour. The white wines are then brought back indoors for blending. The fruit essences, including raspberry and lemon, are incorporated, before twenty different herbs and spices are added. These botanicals gradually impart their flavour to the wine to create the delicate flavour of Noilly Prat Dry.
